Overview

The A.M. Kitchen Manager assists the Sous Chef in overall responsibility for activities of cooks and other personnel involved in preparing, cooking and presenting food in accordance with quality standards, productivity standards, and cost controls for lunch at Forty Two restaurant. Monitors team performance, product quality and production flow. S/he ensures compliance with health, safety, sanitation and alcohol awareness standards. S/he also trains, supervises, coaches, counsels and assists in evaluating staff.

Responsibilities

  1. Oversee/Manage lunch Operations; Work with Line Associates on daily lunch specials; Get lunch specials to Restaurant Manager by 9:30am; Make sure all products are in house for lunch operations.
  2. Help manage, train, empower, coach, and counsel staff; Support catering staff as needed.
  3. Coordinate with Sous Chef on cleaning operations; Ensure walk ins & dry storage will be cleaned and organized daily; equipment racks will be organized daily; catering storage walk through re-organized.
  4. Complies with all policies and standards/procedures applicable to the position, including attendance, time, quality control, and other standards.

Qualifications

  1. Culinary Arts Degree or equivalent preferred.
  2. Minimum of 3 years kitchen experience, 1 year in supervisory role.
  3. Simple Point Of Sale knowledge, Inventory management practices. Ability to cope with varied and fast paced activities; ability to multi task.
  4. Ability to build relationships with guest & coworkers.
  5. This is a hospitality business and a hospitable service atmosphere must be projected at all times. Must be willing to work early morning hours.

Physical and Other Requirements

Occasional Lifting Of Heavy (> 20 Lbs) Objects, Bending, Pulling, Collating/Filing, And Occasional Lifting, Carrying, And/Or Moving Boxes, Files, Etc., Some Of Which Could Be Heavy (>20 Lbs) Or Require The Use Of Carts.
